Jaime Perez
Jaime Perez, a protégé of the often acclaimed "most influential chef in the world", Ferrán Adrià, Perez became a leading chef in Adrià´s renowned 3-Michelin star "El Bulli" restaurant. Also, during his career Jaime has worked in collaboration with other giants in the business, such as Carlos Abellan, Sergi Arola, Pedro Subjiana and Oriol Balaguer, all of whom have influenced his style of cooking and left their mark in different ways. These chefs have acquired global recognition as ground-breaking pioneers of the culinary world.
Before arriving at Monte Rei, Perez was Executive Head Chef at the one of Spain's most recognized and luxurious hotels, The Ritz Carlton Arts Hotel in Barcelona.
There Chef Perez developed his distinctive brand and introduced new Mediterranean dishes achieving a successful combination of Catalonian, Andalusian and Basque cuisine based on fresh ingredients combined to respect the original flavours, where spices are used to enhance the taste and not to hide it.
Chef Perez manages the overall operation of the restaurants, including staff and service, year-round. He incorporates elements of Spain's exciting culinary movement; blending innovative techniques with regional products and history will produce dishes that are as much a work of art as they are designed to suit the most discerning palates.
