Under the guidance of the new executive Chef Rui Silvestre with four different restaurants, two bars, and a host of private dining, corporate retreat and banquet options, the Monte Rei team are assured in providing a variety of culinary discoveries to suit every occasion.

Rui Silvestre

Rui Silvestre, the new Vistas Executive Chef, is the youngest Portuguese Chef to conquer the famous Michelin star which he has kept for the last three years. With an international career in Michelin star restaurants in France, Hungary and Switzerland, Rui, currently 32 years old, returns to his Algarvean origins, committed to conquering Vistas first Michelin star using a modern, passionate and fresh approach for his signature dishes.  

Bruno Flores

Director of Restaurants, Bruno Flores, manages the resort's restaurants and banqueting operations. Prior to his tenure at Monte Rei, Bruno spent 11 years working for The World, where he worked his way up from waiter to Restaurant Manager, holding this position for a number of years whilst managing four F&B outlets at the ship.

Nuno Pires

Sommelier at Vistas Restaurant, Nuno, is very proud of Portuguese wines, and he continuously strives to find the rising stars and the cult heroes of this extremely rich wine producing country.
