The team is headed by Executive Chef, Rui Silvestre, the youngest Portuguese chef to have been awarded a Michelin star. Following a career which has spanned restaurants across Europe, he has returned to his roots bringing with him flavours from all over the world.
Our resident Sommelier, Fernando Cortês, has created a cellar at Monte Rei that is filled with his personal selection of outstanding wines, from the usual names to the more obscure discoveries. Fernando is sure to find the perfect accompaniment to your meal.
